Cornflakes Cookies

Photobucket

Crispy!!! Crunchy!! Melt in the mouth!! Delicious!! Rustic!! Irresistible!! Yummy!! are just some of the comments I have got from people when I have made these cookies at home :) I feel so blissful when I get such comments from them :) Cant ask for anything else in return.

These cookies are easy to make and taste simply delicious. Since its a loose dough cookies that spreads well, it will yield a lot in terms of quantity too :)

Yup thats a lot of butter, but you can skip some oil and cream for the next couple of days and indulge in these :P Your tongue needs to be treated royally at times too!!

My funda is to bake with enough(Lots) of butter but eat less quantity. Don't compromise on taste to eat more. Two delicious cookies a day would do to satisfy your cravings. :) What do you say????

Photobucket

Ingredients:

Butter – 1 cup (200 gms)
Sugar – ¾ cup
Water – 3 tbl sp
Vanilla essence – 1 tsp
All purpose flour – 250 gms
Baking powder – ½ tsp
Cornflakes – 1 cup

Photobucket

Method:

Sieve all purpose flour and baking powder together twice and keep it aside.

Beat butter and sugar in a bowl until light and fluffy. Add essence and beat. Pour in 1 tbl spn of water at a time and beat until incorporated.

Now add the sieved flour and baking powder mixture in three parts and beat in slow speed until it forms into soft dough.

Now cover the bowl with cling film and keep in the fridge for 15 mins.

Photobucket

Meanwhile preheat the oven to 180 c.

Crush the corn flakes in a blender or just with hands into small bits and take in a wide plate or bowl.

Remove the dough from fridge. Wet your hands and pinch small portions of the dough and drop it on the corn flakes and roll until it is well coated. Flatten it using your palms and place on baking tray leaving 1 inch space between the cookies.

Bake for 12 to 15 mins on 180 c.

Photobucket

Tips:

You can use bread crumbs instead of crushed cornflakes and call it bread crumb cookies too :P

It might be a little soft when the cookies are out of the oven, but it will become crispy and melt in the mouth kind once it cools down.

Vanilla Raspberry Yo Yo Biscuits

Photobucket

There are various phenomenons that make me decide on what to make. It could be the hunger or temptation for it or it could be a request from someone, else it could simply be because I need to empty the stock of ingredients I have before their expiry.

This time it was the last reason. I had a good amount of custard powder at home and was wondering what I can try with it. Google guru gave me a big list of recipes and these 'Yo Yo biscuits' excited me a lot. Took down the recipe from 'My diverse kitchen' and was off to bake.

You wont believe, it hardly took an hour for me to do everything. Its simple and yummy. It would for sure please the kid in you :)

These biscuits get the name due to their resemblance to the yo yo toy :)

Its time to treat yourself with home made cream biscuits :) get set go..

Photobucket

Ingredients:

All purpose flour - 1 cup
Powdered Sugar - 1/4 cup
Custard powder(Vanilla flavor) - 1/4 cup
Butter - 125 gms
Vanilla essence - 1 tsp

For the cream:

Butter - 20gms
Icing sugar - 1/2 cup
Custard powder (Raspberry) - 2 tsp

Photobucket

Method:

Sift flour and custard powder and keep it aside.

In a bowl beat butter, powdered sugar and vanilla essence using a electric beater till it becomes fluffy.

Now pour in the sifted flour and custard powder on to the butter sugar mixture and beat on low speed till everything comes together into a soft dough.

Wrap the dough in cling film and refrigerate for fifteen minutes.

Take out the dough and pinch off equal little bits of dough and roll them into smooth balls. Press them a little flat with your palm. Now dip a fork in flour and press it slightly on the biscuits to get the tine marks on top giving it a decorative look.

Place them on lined baking trays.

Preheat the oven to 180°C. Place the try with cookies and bake for 12-15 minutes, watching closely so that they don’t get too brown. 12 minutes did is perfectly in my convection oven.

Let the cookies cool on wire rack for a while. Initially the cookies might feel soft to touch but it will harden as it cools down.

Biscuits are ready.

Photobucket

Beat butter, icing sugar and raspberry flavored custard powder together for a while till they form light and smooth cream.

Sandwich the biscuits with this butter cream and enjoy eating :)

Happy making :)

This quantity would make around 12 to 15 biscuits.

Photobucket

Note:

Be creative and use different flavors of custard powders to make colorful and flavorful biscuits.

If you wish to eat the biscuits as it is, replace the sugar quantity by 1/2 cup and reduce the all purpose flour to 3/4 cup.

You can sandwich the biscuits with jam or nutella spread as well.

If you don't find custard powder, replace it with corn flour. The biscuits would be light brown instead of yellow.

Iced Sugar Cookies - Valentine's day special

Sugar Cookies1

Wish you all a very Happy Valentine's Day!!!!!!!!!! :)

Though there is nothing much for me to do with this day, I really cant let my blog starve on a happy day when there is a lot of celebration around. So I am celebrating the love for my blog and the love spread all around me.

Love you mom and dad. Love you all my friends. :)

Sugar Cookies2
The A and P are my Sis and Bil :)

I was badly looking to bake something and was also wanting to make some heats. So was googling for a while and found this simple yet interesting cookies in Deeba's lovely blog. If you have not visited her blog before, do it right now. She is just too amazing in everything that she does.

I dint make much of changes in the recipe but would still post it here.

Sugar Cookies

Ingredients:

Butter - 3/4 cup
Castor sugar - 1 cup
Egg - 1
All purpose flour(Maida) - 2 1/2 cups
Salt - a pinch(avoid this if your butter is salty)
Almond essence - 1 tsp
Vanilla essence - 1 tsp

Method:

Beat the butter and sugar till fluffy and light. Now add the salt, vanilla essence almond essence and beat for 30 seconds. With a spatula mix in the beaten egg. Finally put in all the flour in one go, and gather together to make a firm dough. Chill the dough for at least 30 minutes in wrap.

Roll out the dough to ¼ inch thickness and cut with assorted cookie cutters. Preheat the oven to 190deg C. Bake on ungreased cookie sheets for 10-12 minutes, watching closely so that they don’t get too brown.

Remove from oven and let the cookies lay on the sheet for a minute. Let the cookies cool on the grill for a while.

This recipe makes approximately 8 dozen 1 ½” small cookies.

For the icing - I simply used icing sugar mixed with just enough water to make it thick and flowing. Add the required food color and drizzle on the cookies as you like. Be creative and have fun.. :)

Iced sugar cookies is ready to eat.. Its yummm and absolutely attractive for kids. :)

Note: You can dip the cookies in melted chocolate and make it taste and look interesting too. :)

Internaltional Food Feast - American Toll House Cookies

American Toll house cookies2

Disasters are always common when it comes to cooking. But one such disaster that turned to be the most favorite invention - The Chocolate Chip Cookies. :)

The famous chocolate chip cookies was a accidental invention by Ruth Wakefield who owned the popular restaurant called the Toll house inn at Massachusetts, United States.

Wakefield was an expert in making chocolate cookies and on one fine day when she was running out of baker's chocolate she substituted for it broken pieces of semi-sweet chocolate from Nestle, thinking that it would melt and mix into the batter. It clearly did not, and the chocolate chip cookie was born. Wakefield sold the recipe to Nestle in exchange for a lifetime supply of chocolate chips. :)

American Toll house cookies3

One other note of history says that the head cook of the Toll house inn, Boucher said that the vibrations from a large Hobart electric mixer dislodged bars of Nestle's chocolate stored on the shelf above the mixer so they fell into the sugar cookie dough it was mixing, then broke them up and mixed the pieces into it. He claimed to have overcome Wakefield's impulse to discard the dough as too badly ruined to waste effort baking them, leading to the discovery of the popular combination.

What so ever, I love chocolate chip cookies too much that I praise the accident :)

Ingredients:

All purpose flour - 1 1/2 cup
Sugar - 1 cup
Soda-bicarbonate - 1/2 tsp
Butter - 1/3 cup
Chocolate chips - why measure?? as much as you like ;)
Peanuts(unsalted but roasted) - 50 gms
Eggs - 2

American Toll house cookies4

Method:

Put the eggs and sugar in a bowl and beat till the mixture becomes pale brown.

Sift the flour and soda bicarbonate. Pour over the egg sugar mixture and mix it well.

Add butter, peanuts and chocolate chips to it and stir to mix together.

Scoop out the cookies mixture with a spoon and roll into a ball with your hands and place on greased tray at least 5 cms. apart. Flatten the balls with your hands to make round shape.

Preheat the oven at 200 degree Celsius.

Bake the cookies at 200 degree Celsius for 10-15 min, until lightly browned. (Time subjected to your oven)

Place on wire rack to cool for 5 min.

Chocolate chip cookies is ready to eat. :) Serve it with tea/coffee. :)

Enjoy making and enjoy eating :)

Zoozoo Biscuits :)

Anything to do with zoo???? wats this all abt??? I can hear all these questions.. :) Zoozoo is the latest heartthrobbing character which runs across and conveys all the message about Vodafone network. I have totally fallen for its cuteness. So was planning to make biscuits today and thought I could make it in the shape of zoozoo (not so perfect :( first try is always excused na! )

Ingredients:

Wheat flour - 1 cup
Maida - 1/2 cup

Oil - 1/2 cup
Powdered Sugar - 1 cup

Baking powder - 1/2 tsp

Salt -a pinch

Method:

Beat baking powder, oil and salt nicely. Now sift maida, wheat flour and sugar together and add it little by little to the oil mixture and mix well. Once the batter blends well make desired shapes out of it. Finally greese microwave proof plate and keep the biscuits over it and bake it in convection mode 180 degree celsius for 8 min. Finally remove it from the microwave and allow it to cool for and while. Wheat biscuits are ready to eat :)

Fibrous wheat is great for health. So attract your family with your creative shapes and enjoy eating :)
