Eggless Banana Choco-chip Muffins

Lately I have been browsing a lot of blogs and some of the recipes impressed me instantly and I even get to mind cook the recipe and feel the taste of it and drool for it.

Eggless banana choco-chip bread was one such. Found this on Anushruti's blog recently and was waiting for an occasion to make it. Her lovely pics and usage of simple ingredients rushed me to make it soon. :)

I have already tried an eggless version of banana muffin last year but this one was tasting different due to the addition of wheat flour, brown sugar and of course choco-chip & raisins added punch to it. :)

It turned out to be a sweet, soft and extremely yummy muffin that I couldn't stop with one :)

Ingredients:

Banana(morris) - 2
All purpose flour - 1 cup
Wheat four - 1/2 cup
Sugar(white) - 1/2 cup
Brown Sugar(Demerara) - 1/2 cup
Butter - 1/2 cup
Baking soda - 1 tsp
Baking powder - 1 tsp
Vanilla essence - 1 tsp
Chocolate chips
Raisins

Method:

Sieve all purpose flour, wheat flour, baking soda and baking powder together.

Melt the butter and transfer it to the mixing bowl.

Grind the white sugar and brown sugar together into a fine powder and cream it along with the melted butter. Add vanilla essence and blend together.

Grind banana into a smooth puree and add it to the mixture and beat well. Now add the flour mixture to it and whisk until well blended.

Finally mix in the chocolate chips and raisins to the batter.

Preheat oven to 375°F or 190°C. Line the muffin tray with liners.

Fill muffin cups with batter upto 3/4th and sprinkle some chocolate chips and bake it for 15-20 mins at 375°F or 190°C. Adjust the time according to your oven settings.

Check if cooked by inserting a skewer in the center. Once done, allow it to cool on a wire rack for a while.

Your banana choco-chip muffins are ready to eat :)

This quantity would make 12 muffins.

Tips:

Morris bananas are large in size, so I used just two. You can use 4 small bananas instead too.

Add few spoons of milk to the batter if its too thick.

You can use whole meal flour instead of wheat flour.

You can totally skip wheat flour and use only all purpose flour.

Reduce the sugar level if your banana is too sweet.

Crush your favorite nuts and add it to the batter and top the muffins with some nuts too.

You can replace brown sugar with normal white sugar.

Bake the better in a loaf pan to make banana bread.

Sinca I hadn't had any eggs but felt like baking something, I searched Internet for some eggless recipe and found one! I just took the muffins out of the oven and they turned out wonderful! Wonder how they'll taste :D
