Vanilla Raspberry Yo Yo Biscuits

There are various phenomenons that make me decide on what to make. It could be the hunger or temptation for it or it could be a request from someone, else it could simply be because I need to empty the stock of ingredients I have before their expiry.

This time it was the last reason. I had a good amount of custard powder at home and was wondering what I can try with it. Google guru gave me a big list of recipes and these 'Yo Yo biscuits' excited me a lot. Took down the recipe from 'My diverse kitchen' and was off to bake.

You wont believe, it hardly took an hour for me to do everything. Its simple and yummy. It would for sure please the kid in you :)

These biscuits get the name due to their resemblance to the yo yo toy :)

Its time to treat yourself with home made cream biscuits :) get set go..

Ingredients:

All purpose flour - 1 cup
Powdered Sugar - 1/4 cup
Custard powder(Vanilla flavor) - 1/4 cup
Butter - 125 gms
Vanilla essence - 1 tsp

For the cream:

Butter - 20gms
Icing sugar - 1/2 cup
Custard powder (Raspberry) - 2 tsp

Method:

Sift flour and custard powder and keep it aside.

In a bowl beat butter, powdered sugar and vanilla essence using a electric beater till it becomes fluffy.

Now pour in the sifted flour and custard powder on to the butter sugar mixture and beat on low speed till everything comes together into a soft dough.

Wrap the dough in cling film and refrigerate for fifteen minutes.

Take out the dough and pinch off equal little bits of dough and roll them into smooth balls. Press them a little flat with your palm. Now dip a fork in flour and press it slightly on the biscuits to get the tine marks on top giving it a decorative look.

Place them on lined baking trays.

Preheat the oven to 180°C. Place the try with cookies and bake for 12-15 minutes, watching closely so that they don’t get too brown. 12 minutes did is perfectly in my convection oven.

Let the cookies cool on wire rack for a while. Initially the cookies might feel soft to touch but it will harden as it cools down.

Biscuits are ready.

Beat butter, icing sugar and raspberry flavored custard powder together for a while till they form light and smooth cream.

Sandwich the biscuits with this butter cream and enjoy eating :)

This quantity would make around 12 to 15 biscuits.

Note:

Be creative and use different flavors of custard powders to make colorful and flavorful biscuits.

If you wish to eat the biscuits as it is, replace the sugar quantity by 1/2 cup and reduce the all purpose flour to 3/4 cup.

You can sandwich the biscuits with jam or nutella spread as well.

If you don't find custard powder, replace it with corn flour. The biscuits would be light brown instead of yellow.

Your Vanilla Raspberry Yo Yo Biscuits look fabulous. Your presentation is too good. I am tempted to try these. Just a query... doesn't the custard powder leave a raw taste in the cream since it's uncooked? Any other way I can use them w/o letting the rawness in the cream? I am somehow skeptical abt this.

@MD: I too had the same doubt when I started off. But since the quantity is just two tsp, it hardly showed off the rawness. I totally could not find anything wrong about it. So just give it a try. Or if at all you don't like it, you can skip it as well and use normal butter cream and some food color and essence to give it the flavor.

made these today - they were so easy to make, my kids had a blast, so exciting due to the cream (we are making CREAM cookies at home!), smelt divine and made my house smell lovely too, and best of all tasted great and will go in their snack boxes tomorrow (they are so proud of their contribution they are begging to take them to school (to show off, no doubt!). thanks for a keeper recipe.

I make something very similar using cornstarch for christmas, but i never knew you could get flavoured custard powder! or at least i hadnt thought about it before now, the world of options opened up seems endless! :) Such perfect little biscuits you have made, and im sure taste just as wonderful :)
