Sizzling Sundae

Here it is... The delicious and exciting dessert that I made with my brownies :)

Sizzling sundae or Hot fudge sundae is a sizzling hot cake on a hot plate topped with chill ice cream and chocolate sauce :)

The sizzle and smoke would give you an adrenalin rush for sure :)

Though it looks like a fancy dish served at restaurants, its pretty simple to make at home and the satisfaction and praise that you get for making it from scratch is priceless :)

Making sizzling sundae for dessert would be the best choice to give a most memorable dinner party for your invitee :)

Ingredients:

Hot plate (Sizzlers plate)
Brownie
Vanilla Ice cream
Chocolate sauce
Nuts (optional)

Method:

Step 1: Remove the hot plate from the wooden base and heat it over the stove for 5 mins.

Step 2: Microwave the brownie on high for 30 seconds.

Step 3: Remove the hot plate from the stove wearing your gloves and place it on the wooden base. Be careful, its going to be super hot!!!

Step 4: Place the hot piece of brownie on the plate.

Step 5: Scoop out vanilla ice cream and place it on top of the brownie.

Step 6: Pour the chocolate syrup on top of the ice cream and around the brownie.

Step 7: Enjoy watching the syrup sizzle and bubble up.

Step 8: Quickly grab your spoon and dig in until it is all done :P

Tips:

Top it with some nuts if you wish to.

Do not heat the sauce. It would thicken up and will not flow.

Pour the sauce just before you serve. The sizzle will last only for 5 mins. ;)

Brownies - Sinfully Delicious!

Our chocolate loving family with no-doubt loves Brownies too :)

I had bought a pack of dark chocolate from Kodaikanal a couple of weeks back and it had been waiting to turn into brownies :)

These brownies are damn delicious and hard to resist types. I have baked them 4 times in succession already since its very addictive :P Beware!!!

These brownies also turned into a very delicious and luxurious dessert :) You have to wait for two more days to know what I made with these!! Stay tuned ;)

Ingredients:

Dark Chocolate - 115 gms
Butter - 125 gms
Eggs - 2
Caster Sugar - 230 gms
Vanilla essence - 1 tsp
All purpose flour (maida) - 60 gms
Cocoa powder - 2 tbl sp
Walnuts - 10

Method:

Sift the all purpose flour and cocoa powder and keep it aside.

Chop the chocolate into small pieces and butter into small cubes and melt them together over double boiler. (A bowl kept on top of a pan with water)

Beat the eggs in a bowl until thick and foamy. Gradually add caster sugar and beat continuously until the mixture leaves a ribbon like trail when lifted. Add the vanilla essence melted chocolate butter mixture to the bowl and blend in thoroughly.

Now add the sifted flour and cocoa powder into the bowl and fold in until well incorporated. Finally add the chopped walnuts and give a stir.

Preheat the oven to 350°F or 180°C.

Grease and flour the baking pan and pour in the prepared batter into the pans and bake in 180°C for 45 -50 mins or until wooden pick inserted in center comes out clean.

Cool on wire rack for 15 mins and enjoy :)

This will make 9 large pieces of brownies :)

Oats Vada Burger

Oats vada burger!! or rather South Indian version of burger :)

This was one other dish that I tried for the cooking contest that happened last week. Combining the oats and vada batter was a serious challenge as I had said and this idea struck me when I wanted to make a western dish out of the said ingredients. The patty was crisp on the outer side and soft inside, just as perfect as we would love it for a burger.

A perfect healthy snack for kids and grown up kids as well :)

Ingredients:

Burger buns – 3
Lettuce
Tomato
Onion
Mayonnaise
Tomato sauce
Cheese

For patty:

Oats – ½ cup
Potato – 1

Bengal gram dhall – 1 cup

Green chillies – 2
Bread crumbs
Oil – for frying

Method:

To make patty:

Soak Bengal gram dhall for 1 hour in water. Grind the dhall coarsely without adding much of water.

Cook and mash potato smoothly.

Dry roast the oats for three mins.

Chop chillies finely.

Add the mashed potatoes, chillies and roasted oats to the Bengal gram batter and mix well until it rolls into dough.

Now make medium sized balls of dough and flatten it with the palm. Dip them in a plate of bread crumbs until they are well coated on all the sides.

Heat oil in a pan and fry until well cooked and golden brown on both the sides.

Assembling burger:

Cut the burger bun horizontally into two. Spread a little tomato ketchup and mayonnaise on both the halves.

Place a lettuce leaf on the lower half. Top it with a slice of onion and a slice of tomato. Place the above made patty and again a slice of tomato, onion, cheese singles and lettuce. Close the burger with the top half.

Enjoy burger with hot tea :)

Ice Cream Sandwich - Valentine's Day Special

Wish you all a very happy Valentine's day!!

The best feelings on earth are to love and to be loved.

This is my first valentine's day after I found my love and is eventually a special day for both of us. We have been competing in expressing to each other in different ways today and one of the ways I won his heart is through his tummy :)

Ice cream sandwich was a long time dream for me. I wasnt sure how it would work out and was not even sure if it will be possible to bite comfortably.

But today was the day to experiment since my hubby loves ice creams as well as cookies. I couldnt think of anything better to steal his heart :)

It worked out so well. The texture and look was stunning and surprisingly the cookies dint turn soft in the fridge and was super comfortable to bite along with the ice cream and eat :)

Eggless Chocolate Cookies Recipe:

Ingredients:

All purpose flour (Maida) - 80 gms
Baking powder - 1/4 tsp
Baking soda - 1/4 tsp
Cocoa powder - 20 gms
Butter - 50 gms
Powdered sugar - 50 gms
Water - 1 tblsp

Method:

Sift maida, baking powder, baking soda and cocoa powder together.

Chop butter into small chunks. Beat butter and sugar until light and fluffy.

Now add a tblsp of water to it and beat for few mins.

Add the dry ingredients mixture in two parts and beat in low speed until incorporated and rolls into a ball.

Now wrap the cookie dough in a cling film and refrigerate for 10 mins.

Preheat the oven to 180°C.

Remove the dough from refrigerator. Sprinkle some All purpose flour on your working surface and roll out the dough into a 1/4 inch thick rectangle. Use your cookie cutters to cut out shapes.

Place the cut out cookies on a baking tray and bake for 12-15 minutes at 180°C.

Let the cookies cool on wire rack for a while and store in air tight container.

Assembling the Ice cream sandwich:

Bake the cookies.

Place one cookie under side facing up on a plate.

Cut a small slice of ice cream of your choice and quickly cut the ice cream using your cookie cutter and place it on top of the cookie and sandwich another cookie on top and put it in the freezer for it to firm up.

Serve chill just out of the freezer :)

Betel Oats Manchurian - My runner up recipe

Having been the winner of the title "Oats queen" last year, I felt the urge to create a new dish this year and make it yet another successful one.

I spent a couple of days mind cooking a lot of combinations to bring out the best.

I displayed two recipes for the contest and one among them is this Betel Oats Manchurian. This recipe was way different from the others that were displayed for the contest and I was betting on it for the contest.

Just as I thought, I won the second place too for this recipe :) :) All smiles :)

Felt happy to have lost the first place to my mom. She is my mentor and she deserves to win the title this year :)

My new home has a beautiful garden with loads of pretty plants. One such pretty plant that I admire is the betel plant. The leaves are so fresh always and since the time I stepped into the house I have been thinking of using these leaves in some recipe of mine.

The time had come for the leaves to be used for a recipe and that too for a winning recipe :)

I used betel leaves along with Saffola oats and MHP's Masala vada mix to make these manchurian balls. The betel leaves gave a distinct flavor which was literally unbeatable :) The fact that manchurian is a favorite for many was the advantage factor for me to sell these easily :)

The different combination that I tried out clicked so well that it stole the hearts of many who had witnessed the contest :)

Trust me and give it a try. I'm sure you would fall for it as well :)

Betel Oats manchurian2

Ingredients:

Oats – ½ cup

Betel leaves (Vethalai / Thamalaku) – 20

Carrots - 2

Maida – 2 tblsp

Corn flour – 2 tblsp

Bengal gram dhall(Kadala paruppu) – 1 cup

Green chillies – 2

Ginger – 1 inch piece

Onions – 2

Curry leaves

Salt – for taste

Cooking soda – ¼ tsp

For sauce –

Corn flour – 2 tblsp

Ginger garlic paste – 2 tsp

Tomato sauce – 4 tblsp

Soy sauce – 1 tsp

Chili powder – ½ tsp

Sugar – 1 tsp

Coriander leaves

Method:

Soak Bengal gram dhall for 1 hour. Grind the dhall coarsely without adding much of water.


Powder the oats coarsely.


Grate carrots and grind green chillies and ginger.


Chop the betel leaves and onions finely.


Take oats, ground Bengal gram dhall, corn flour, maida, green chilly ginger paste, chopped onoin, chopped betel leaves, salt and soda in a bowl. Add water little by little and mix until it comes to vada batter consistency. Leave it closed for 15 mins.


Now pinch small portions and roll them into balls. Heat oil in a kadai and deep fry until golden brown and keep it aside.


Heat a tsp of oil in a pan and add ginger garlic paste and fry for a min. Now add tomato sauce, soy sauce, chili powder and sugar.


Dilute corn flour in ½ cup of water and add it to the pan. Simmer the stove and keep stirring until it becomes thick and shiny.

Now drop in the above made balls and mix until well coated. Garnish with chopped coriander leaves and serve with hot tea.


Enjoy eating delicious and flavorful manchurian balls :)

Oats and Dates Bajji - Mom's winning recipe

The big day had come again this year. Saffola along with MHP masala and Oriflame conducted their annual "Oats queen contest" on 7th of feb this year.

This time the topic was "Innovative tea time snack" using Saffola oats, Saffola Oil and MHP masala(Masala vada mix/Bajji mix/Adai mix).

The difficulty in creating a dish was when western ingredient oats and these typical Indian masala mixes had to be used together in a dish.

Mom, Me and my Mother-in-law broke our heads and came out with amazingly different dishes. We took more inputs from the family members and came up with 5 successful dishes out of which 4 entered the contest and 2 of them won the titles :)

Yes!! Mom won the first place for her Oats and Dates Bajji and I won the second place for my Betel Oats Manchurian :) It was a proud moment to see mom win the first place and felt really happy when we both won the first two places out of a lot of creative entries :)

Mom is super creative. She came up with a sweet dish with such ingredient combination and it was absolutely delicious and worth the title.

I will be posting all the 5 creative dishes as a series now :) Have a virtual oats treat :)

Oats and dates bajji is a brain child of my mom. She made our favorite kesari with oats and then stuffed them into dates. Isnt it already delicious!! She further dipped it into bajji batter and deep fried it to hide all the fun ingredients.

At the first though or sight, I was not sure how this combination would work out, but surprisingly it was tasting brilliant. Mild salt and spicy outer coating with a sweet and soft bite inside :)

OMG! It was fantastic and no wonder it won the first place :) Hats off to you Mom. I bow down to your skills :)

Ingredients:

Oats - ½ cup
Rava – ½ cup

Sugar – 1 cup

Water – 3 cups

Cardamom – 1

Ghee – 2 tblsp

Food color(orange) – a pinch

Dates - 20

Besan - 1 cup
Rice flour - 1/4 cup
Chilly powder - 1 tsp
Salt - 1 tsp
Water
Oil – for frying

Method:

Method for oats kesari:

Powder the oats coarsely.

Boil the water in a pan.

Mix rava, oats, and sugar, add it to the pan when the water boils. Add the food color and keep stirring until it becomes thick.

Finally add ghee and cardamom powder and mix well to make oats kesari and keep it aside.

To make Oats and dates bajji:

Slit the dates neatly and remove the seed. Stuff 1 tsp kesari inside the dates.

Mix besan, rice flour, chilly powder and salt with adequate water and dip the stuffed dates until it is well coated.

Deep fry in hot oil until golden brown.

Enjoy with a cup of coffee.

Variation:

If you want to make a complete sweet version of this bajji -

Option 1:

Mix 1 cup of maida with 1/4 cup of corn flour, 1 tblsp of sugar and a pinch of salt with adequate water to make bajji batter consistency and dip the stuffed dates in it and deep fry until well roasted.


Option 2:

Mix 1/2 cup of besan, 1/2 cup corn flour and a pinch of salt along with adequate water to make bajji batter consistency and dip the stuffed dates in it and deep fry until roast.
