Curried Pasta - Indian Style

I love pasta and the moment I say it, I am drooling for it :)

I have had a few versions of curried pasta from different places and since then I have been wanting to make my own version which would suit my taste buds :) So on a fine day this idea popped up in my head and quickly made my version with our ever favorite Indian spices :)

You cant go wrong with this version and it will for sure be one of your family favorites too :)

Ingredients:

Pasta - 2 cups
Maida - 3 tblsp
Milk - 2 cups
Butter - 2 tblsp
Broccoli - 1 cup
Turmeric powder - 1/2 tsp
Chilly powder - 1 tsp
Garam masala - 1/2 tsp
Coriander powder - 1/2 tsp
Jeera powder - 1/2 tsp
Kasoori Methi - 1/2 tsp
Salt - for taste

Method:

Cook pasta and broccoli in water separately and keep it aside. 

Take butter in a sauce pan and while it is melting, mix the maida and milk in a vessel. See to that it has no lumps. 

Once the butter melts down completely, pour in the milk maida mixture into the pan through a sieve. Keep mixing. Allow this to boil until it becomes slightly thick and creamy. 

Now add salt, garam masala, chilly powder, turmeric powder, jeera powder, cumin powder and kasoori methi to it and mix well. Simmer the stove and allow it to get cooked for a while until it starts smelling of spices.

Finally add the cooked pasta and broccoli to it and toss once for the sauce to coat all the pasta. 

Serve hot and enjoy eating the Indian version of curried pasta :)

International Food Feast - Italian Mint Pasta

The next on International food feast is Italian Spaghetti pasta :) The first dish that comes to my mind when I say Italian is Pasta. I just love it.

Right from childhood, I have been in love with anything that resembles noodles. Now the latest crush is on
Spaghetti pasta. :)

All in the noodle form!

ummmmmmm thats a perfect dinner :)


Ingredients:

Spaghetti pasta - 250 gms
Broccoli - 250 gms
Mint leaves - 1 bunch
Garlic - 5 pods
Jalapeno(Chilly) - 2
Paprika - 1/2 tsp(optional)
Chilly sauce - 1 tsp(optional)
Olive oil - 4 tbsp

Cheddar Cheese
Salt - for taste

Method:

Cook the pasta in boiling water for 8 min. Drain excess water and keep it aside. Cut broccoli into florets and cook in hot water for 5 min and drain it. Grind mint leaves and chilly finely adding some water and adequate salt to it.

In a pan take three spoons of cooking oil and add the chopped garlic and fry for a while. Then add the ground mint leaves paste to it and fry for few min. Now add the broccoli, cooked pasta, paprika and olive oil to it and saute well. Finally grate cheese over the pasta and serve it hot :)
