
Dint I tell you guys that I reserved some potato paneer filling for a simple recipe!!! The simple recipe that uses the filling is this toast :)
The potato paneer filling complimented bread so well and we all loved this for breakfast :)
There are just two small differences in the filling, being the addition of lemon juice and skipping the corn flour.
Anyways a recap of the Aloo paneer filling comes with this post simply for the sake of visitors who hop in directly to this post :)

Ingredients for the toast:
Bread slices
Butter
Aloo paneer filling

Ingredients for the filling:
Potato - 3
Paneer (grated) - 1/2 cup
Green chillies - 2
Onion - 1
Ginger - 1/4 inch piece
Garam Masala - 1/2 tsp
Turmeric powder - a pinch
Salt - for taste
Lemon juice - 1 tblsp

Method:
Boil and mash potatoes. Chop onions, ginger and chillies finely.
Take two tsps of oil in a pan and saute onions until it turns transparent. Add the chillies and ginger and saute for a min. Drop in the mashed potatoes, grated paneer, salt, turmeric powder and garam masala, mix well and cook on medium flame for 3 to 4 mins, while stirring continuously. Simmer the stove and add the lemon juice and mix well.
Aloo paneer filling is ready.

Apply butter on bread and sandwich two slices with a generous amount of aloo paneer filling. Toast them using a toaster until golden brown.
Serve it hot with ketchup.
